Tasting Notes

Bouquet of the wine highlights highly fragrant, peach, pear, mango, litchis, citrus and allspice with a hint of flint. The palate taste of Granny Smith and Golden apples, pears and white flowers with a hint of lemon and grapefruit for freshness. Structure shows medium body dessert wine with good acid balance and a long finish.

Winter's Hill Golden Nectar is made from a blend of three different grapes: Pinot Gris, Pinot Blanc, and Early Muscat. Harvested, and then frozen, the fruit is carefully loaded into the press while still frozen. Slow, gentle pressing can take more than 24 hours and only the sweet, concentrated nectar is extracted. Excellent balance of sugar, acidity, and alcohol makes it delicious alone, or paired with spicy hazelnuts or cheese such as a thin slice of Parmesan Reggiano.

Tasting Notes

The grapes were picked by hand, and pressed whole cluster to reduce solids in the must. With sugar levels so high, the yeast needs kid glove treatment to begin the fermentation. Keeping the temperature warm enough to keep the yeast happy, but cool enough to preserve all the aromatics, Winemaker Delphine Gladhart monitored the wine closely, and finally stopped the fermentation with 10% residual sugar remaining. The nose is a fragrant blend of citrus and white flowers like lemon, lime, and narcissus. Flavors of pear, honey and lime predominate in a medium bodied wine with great balance of acidity and flavor and a long finish. This Pinot Gris has the intensity and flavor to pair well with many desserts. Try it with poached pears or Ginger-Nut cake from the Trappist Abbey.

Tasting Notes

This wine has a great floral nose you can find in the palate as well with a hint of lime. The flavors are intense with peaches, lime, flint and narcissus. The palate is full, rich and a crisp acidity yields a clean long mineral finish. This is a great sipping wine, as well as an excellent complement to Asian foods, grilled vegetables, salmon, seafood and cheese.

Fresh and crisp in the Winter’s Hill tradition the 2008 vintage has additional body and richness in the mouth from the slow maturation during the summer of 2008. An ideal match for grilled fish, also pairs well with lentil and tomato salad.

To preserve the delicate aroma of Pinot Gris, Winemaker Delphine Gladhart uses whole-cluster pressing to extract the juice. In other words, the hand-picked bunches of grapes are placed directly into the press without removing the stems or crushing the berries. This also helps to reduce the color that can be extracted from the copper-colored skins if they are subject to excessive processing.

After pressing, the juice is fermented slowly in stainless steel tanks. Fermentation temperature is kept low, again to preserve the aroma and freshness of the fruit. The malo-lactic fermentation is blocked, to preserve the natural acidity of the wine.

Seven months of aging, and the wine was bottled in June 2010.

The 2011 Pinot gris is round and ample, with aromas of flint and citrus such as grapefruit. On the palate the flavors are more tropical fruit, such as pineapple, with a long, clean finish.
